Australian Gramma Pie Recipe

Ingredients
  • Freshly ground pepper to taste
  • 1 Recipe for Rouille;
  • 2 l Fish stock;
  • 2 Good pinches fennel seeds;
  • 2 50 g sachets tomato paste
  • 1 425F gram can peeled tomatoes
  • 1 lg Loaf French Bread
  • 1 kg Raw king prawns
  • 1 kg Black mussels; well scrubbed
  • 1/2 c Fresh basil leaves;
  • 3 Cloves garlic
  • 1 1 kilogram thick fish fillets;
  • 1 Thin strip orange peel;
  • 1/2 c sliced fresh parsley
  • 3 Leeks
  • 3 tb Olive oil
  • 250 g Tasmanian or Victorian scallops

Directions
  • Step #1 Remove & discard green leaves from leeks.
  • Step #2 Rinse the white portion to remove any dirt, then slice thinly.
  • Step #3 Heat oil in a large saucepan, add sliced leeks with crushed garlic & cook slowly for about 5 mins.
  • Step #4 Add tomatoes (plus all the juice from the can) & the tomato paste.
  • Step #5 Spice up this with a generous quantity of freshly milled black pepper then add the strained fish stock, fennel seeds & orange peel.
  • Step #6 Increase the heat & bring to the boil, watching carefully to prevent the soup boiling over.
  • Step #7 Continue to boil for 5 to 10 mins to amalgamate the broth.
  • Step #8 Lower the heat & add fish, peeled prawns & mussels (if used).
  • Step #9 Cover the pot & let simmer carefully until the mussels open.
  • Step #10 This will take about five mins, then add scallops & cook for one min longer.
  • Step #11 Add salt to taste.
  • Step #12 Serve in big shallow soup bowls or spaghetti dishes Sprinkle topd with parsley & torn fresh basil.
  • Step #13 Serve hot with crusty French bread.
  • Step #14 Accompany with a bowl of Rouille to add to the hot soup.
  • Step #15 Serves 8.
