Avocado Salad Recipe

Ingredients
  • 2 tb Extra-virgin olive oil
  • 4 Sprigs fresh cilantro; cut thin chiffonade
  • 3 Plum tomatoes; cut 1/4" dice
  • Sugar; to taste
  • Fine sea salt; to taste
  • 1 ts Cumin seed; toasted and ground
  • 2 Avocados; sliced 1/2" cubes
  • Freshly-ground black pepper; to taste
  • 1 Lime; zested & juiced
  • 1/2 c Finely-sliced red onion
  • Cayenne pepper; to taste

Directions
  • Step #1 In a large bowl, mix the sliced avocado with the juice & the zest of the lime.
  • Step #2 Add the tomatoes, onion & cilantro.
  • Step #3 Mix well, taking care not to smash the avocado & the tomatoes.
  • Step #4 Next add the cumin, salt, cayenne, pepper, extra-virgin olive oil & sugar.
  • Step #5 Taste & Spice up if necessary.
  • Step #6 put in the fridge until ready to use or at least two hrs.
  • Step #7 This recipe yields 4 servings.
