Ingredients
  • 1 tb sliced red peppers
  • 2 c Chicken or vegetable stock
  • 1 ts Cornstarch
  • 1 tb Roasted garlic puree
  • 1 c Shredded Chihuahua cheese; plus more for garnish
  • 1 tb Sliced scallions
  • 1 tb sliced yellow peppers
  • 1 lb Chorizo sausage; cooked and crumbled
  • 1 tb sliced green peppers
  • 2 qt Heavy cream
  • 1 ts Ground Mexican oregano
  • 1 tb sliced red onion
  • 1 c Shredded jalapeno
  • 1 tb sliced yellow onions
  • 1 ts Cumin

Directions
  • Step #1 Into a four quart stock pot, add roasted garlic, onions & peppers.
  • Step #2 Sweat vegetables until soft.
  • Step #3 Add spices.
  • Step #4 Let contents cook for five mins.
  • Step #5 Add chorizo sausage, heavy cream, & stock.
  • Step #6 Cook for 45 mins.
  • Step #7 Add jalapeno peppers & cheese & cook for five mins.
  • Step #8 Add cornstarch & let cook this until desired level of thickness is reached.
  • Step #9 Serve.
  • Step #10 Yield: 8 servings.
