Baby Spinach, Pancetta And Mushroom Salad Recipe

Ingredients
  • 12 oz Cooked shrimp; cleaned
  • 4 tb Lemon juice; fresh
  • 1/2 ts Oregano
  • 2 Garlic cloves; crushed
  • 4 sm Butter lettuce heads;
  • 1/2 ts Dry mustard
  • Fresh parsley; for garnish
  • 2 tb Red wine vinegar
  • Salt; to taste
  • === DRESSING ===
  • 1 c Olive oil
  • Freshly-ground black pepper; to taste

Directions
  • Step #1 mix all ingredients for the dressing in a food mixer or with a wire whip.
  • Step #2 Chill before serving.
  • Step #3 Remove a few of the center leaves of the heads of butter lettuce.
  • Step #4 Chop & mix with the shrimp.
  • Step #5 Place the lettuce "bowl" on a plate & pour a bit of the dressing over it.
  • Step #6 Place the sliced lettuce & shrimp mixture in the center of the "bowl".
  • Step #7 Add just a bit of the dressing & serve.
  • Step #8 Garnish with the parsley.
  • Step #9 Comments: This dish makes a fine first course.
  • Step #10 It is easy to do and if the shrimp are fresh it is delicious.
  • Step #11 You can use some other form of sliced lettuce if you wish.
