Baked Stuffed Zucchini Recipe

Ingredients
  • 1/2 c Croutons
  • 1 lg Onion; sliced
  • 1/8 ts Freshly-ground black pepper
  • 6 lg Tomatoes -;
  • 3 tb Butter or margarine
  • 1 lg Garlic clove; minced
  • 1 cn Spam luncheon meat - ; sliced
  • 1/2 ts Basil
  • 2 sm Zucchini - ; sliced

Directions
  • Step #1 Cut a thin slice from top of tomatoes; scoop out centers leaving 1/4-inch shell.
  • Step #2 Finely chop tomato pulp; reserve.
  • Step #3 In large skillet, saute zucchini, & garlic in butter 3 mins, onion, stirring often.
  • Step #4 Add Spam, basil, tomato pulp, & pepper; stir this to mix.
  • Step #5 Bring to boil; lower heat & let simmer uncovered until liquid evaporates, stirring every once in awhile.
  • Step #6 Cool to about room temp.
  • Step #7 Mix in croutons.
  • Step #8 Spoon filling into tomato shells.
  • Step #9 Place tomatoes in baking dish; bake in 375 degree oven 20 mins.
  • Step #10 Serve hot or at room temperature.
  • Step #11 This recipe yields 6 servings.
