Bamia - (meat And Okra Stew) Recipe

Ingredients
  • 1/2 c Stock or water;
  • 1 c sliced & peeled tomatoes;
  • Salt & freshly ground black pepper to taste
  • 500 g Fresh okra;
  • 1 tb Ghee;
  • 1 kg Boneless stewing lamb or beef
  • 2 tb Ghee or butter;
  • 1 lg Onion; sliced fine
  • 1/2 ts Cummin powder;
  • 1/2 ts Sugar;
  • 2 tb Tomato puree;

Directions
  • Step #1 TRIM the meat & cut into three cm cubes.
  • Step #2 Heat ghee or butter in a heavy bottomed pan & brown the meat well, adding a single layer of meat to the pan at a time.
  • Step #3 remove this from the pan & transfer to a casserole.
  • Step #4 Lower the heat, add onion & fry carefully until transparent.
  • Step #5 Add cummin powder, tomatoes, tomato puree & stock.
  • Step #6 Stir well to lift browned sediment.
  • Step #7 Pour over the lamb in the casserole.
  • Step #8 Add salt & pepper to taste & the sugar.
  • Step #9 Cover tightly & cook in a moderately hot oven for one-and-a-half hrs.
  • Step #10 Wash, drain & trim the okra.
  • Step #11 Heat ghee in a pan, add okra & fry over medium heat for three mins, tossing carefully.
  • Step #12 Arrange okra on top of the meat in the casserole.
  • Step #13 Cover & cook for further 40 mins or until the meat is tender.
