Step #1 --CREAMY SHRIMP SAUCE-- 3 Shallots, sliced 1 lb Small shrimp 1 c White wine 2 c Whipping cream 1/2 c Fish stock or chicken broth 3/4 lb Butter ROAST PEPPERS: Place poblano peppers under the broiler & char on all sides.
Step #2 Put in plastic bag & freeze 10 mins.
Step #3 remove this from freezer, rub off peel, then slit to remove seeds under running water.
Step #4 preheat your trusty oven to 400F degrees F.
Step #5 In a medium saute pan, & cilantro until the shrimp are almost cooked, saute onion, shrimp, about 5 mins.
Step #6 place this in mixture in a bowl, add the cheese & set aside.
Step #7 TO ASSEMBLE: Lay the four prepared chicken breasts flat, skin-side down.
Step #8 Spice up this with salt & white pepper.
Step #9 Layer each breast with one pepper & 2 to 3 tbsps shrimp/cheese mixture over pepper.
Step #10 Roll each breast tightly to form a cylinder.
Step #11 Tie each cylinder in 3 places, both ends & in the middle.
Step #12 In a skillet, heat about 1/4-inch of oil.
Step #13 Lightly brown chicken breasts, one at a time, on all sides.
Step #14 remove this from heat, transfer to a oven-proof dish & bake for 10 mins until golden brown.
