Orange Juice Fizz: Recipe

Ingredients
  • 1/4 c Cilantro, sliced Salt, to taste
  • Cooked, peeled, & sliced 2 ts White pepper
  • 4 lg Poblano peppers 2 8 ozs chicken breasts,
  • 1/2 lb Medium shrimp, lightly lbed flat
  • 1/4 lb Monterey jack cheese, 12 6-in long strings
  • 1/4 c Onion, sliced Halved, deboned, and
  • Shredded Oil, for frying

Directions
  • Step #1 --CREAMY SHRIMP SAUCE-- 3 Shallots, sliced 1 lb Small shrimp 1 c White wine 2 c Whipping cream 1/2 c Fish stock or chicken broth 3/4 lb Butter ROAST PEPPERS: Place poblano peppers under the broiler & char on all sides.
  • Step #2 Put in plastic bag & freeze 10 mins.
  • Step #3 remove this from freezer, rub off peel, then slit to remove seeds under running water.
  • Step #4 preheat your trusty oven to 400F degrees F.
  • Step #5 In a medium saute pan, & cilantro until the shrimp are almost cooked, saute onion, shrimp, about 5 mins.
  • Step #6 place this in mixture in a bowl, add the cheese & set aside.
  • Step #7 TO ASSEMBLE: Lay the four prepared chicken breasts flat, skin-side down.
  • Step #8 Spice up this with salt & white pepper.
  • Step #9 Layer each breast with one pepper & 2 to 3 tbsps shrimp/cheese mixture over pepper.
  • Step #10 Roll each breast tightly to form a cylinder.
  • Step #11 Tie each cylinder in 3 places, both ends & in the middle.
  • Step #12 In a skillet, heat about 1/4-inch of oil.
  • Step #13 Lightly brown chicken breasts, one at a time, on all sides.
  • Step #14 remove this from heat, transfer to a oven-proof dish & bake for 10 mins until golden brown.
  • Step #15 remove this from oven.
  • Step #16 Cut strings & slice chicken into 1-inch roulades (rounds).
  • Step #17 Drizzle a few tbsps of Creamy Shrimp Sauce onto a plate & arrange the roulades on top of the sauce.
  • Step #18 Serve warm.
  • Step #19 Makes 4 servings.
  • Step #20 TO MAKE CREAMY SHRIMP SAUCE: In a saucepan over medium-high heat, mix shallots & wine.
  • Step #21 cook this until reduced by three-fourths.
  • Step #22 Add stock/broth & shrimp & cook this until reduced by half.
  • Step #23 Add the cream & reduce again by half.
  • Step #24 Whisk in the butter by tbsps.
  • Step #25 cook this until butter melts and sauce is well-mixed.
  • Step #26 remove this from heat.
