Ken & Laura's Amazing Impromptu Sweet-n-sour Recipe

Ingredients
  • 7/8 c Boiling water
  • 1 c Stewed tomatoes
  • 1/8 ts Cayenne pepper
  • 1 ts Salt
  • 1/2 ts Ginger root, minced
  • 1 c Mushrooms, sliced
  • 1 lg Clove garlic, crushed & -minced
  • 1 lg Yellow onion, minced
  • 2 ts Curry powder
  • 1 c Green peas, fresh or frozen
  • 1 c TVP granules
  • 3 tb Tomato paste

Directions
  • Step #1 mix TVP & water in a bowl.
  • Step #2 let this stand 10 mins.
  • Step #3 In a non-stick skillet or wok, heat 2 tbs.
  • Step #4 water or other liquid.
  • Step #5 Saute onion, garlic, and ginger root for 5 mins.
  • Step #6 Add TVP & stir constantly another 5 mins (add extra liquid to prevent sticking, if necessary).
  • Step #7 Add tomato paste, tomatoes, salt, curry powder, & cayenne & let simmer for a few mins.
  • Step #8 Add peas & mushrooms, cover, bring to a boil, & let simmer over low heat/flame 5 mins.
  • Step #9 Serve over rice.
