Khao Suay (steamed Jasmine Rice) Recipe

Ingredients
  • 2 tb Dried shrimp
  • 13/16 Red chilis finely julienned
  • 1 md Pineapple, sweet & juicy
  • Coriander leaves
  • 1 tb sliced coriander/cilantro
  • 2/3 tb sliced shallots
  • 1 ts Sugar
  • 2 c Steamed rice, cold
  • 2/3 tb Garlic, coarsely sliced
  • 1 tb fish sauce
  • 1/2 tb Grated ginger
  • 2 Green of 2 spring onions, coarsely sliced

Directions
  • Step #1 Cut the pineapple in half lengthwise, & scoop out the fruit (my wife uses a curved "grapefruit knife", but any knife will do.

  • Step #4 ) then chop it into bite sized chunks.
  • Step #5 Put the fruit in a bowl & add the shallots, chili, ginger, scallion & coriander, mix & set aside.
  • Step #6 Add a pinch of salt to bring out the juice.

  • Step #9 In a wok, heat about a tbsp of oil, & stir fry the shrimp until crispy, & the oil is aromatic.
  • Step #10 Remove the shrimp with a slotted spoon & drain, then set aside.
  • Step #11 Add a further tbsp of oil, & stir fry the garlic until golden brown.
  • Step #12 Add the rice, & stir thoroughly.
  • Step #13 Add the fish sauce & sugar, & continue stirring.
  • Step #14 When the rice is heated through, add the pineapple mixture & cooked shrimp, & stir until thoroughly heated through.
  • Step #15 Pour the mixture into the pineapple shells, garnish & serve.
  • Step #16 Note: if you prefer fried rice to be darkish brown in colour, then replace half the fish sauce with dark sweet soy sauce.
  • Step #17 Variation: do not cook the fruit mixture.
  • Step #18 Instead put the fruit mixture & the stir fried rice in the fridge (separately) & chill all the ingredients, then just before serving mix them & put them in the pineapple skins.
  • Step #19 If you are serving cold then you can also add a few mareschino cherries as garnish.
  • Step #20 This cold variant makes an excellent counterpoint to hot curries & spicy chilli dishes on a hot day (and it gets hot here I can assure you, with the shade temperature topping 40 celsius on many a day.
  • Step #21 ) This is an unusual recipe for Thai food because it is essentially a vegetarian dish - they are not common in Thailand, where even nominally vegetarian dishes often have quite a large amount of meat.
  • Step #22 This one has a little dried shrimp, & the true vegetarian could easily leave that out.
  • Step #23 It is also unusual in that it is rather a theatrical dish: though the theatricality comes from a Thai habbit of frugality, & perhaps a desire to have less dishes to wash! For two people you need a medium sized pineapple: choose carefully it should be sweet & juicy.
