8 oz Boneless chicken breasts -, - cut into small cubes
1 -Red bell peeper -AND-
1 tb Olive oil or vegetable oil
1 Garlic clove; minced
3 tb Finely shredded fresh basil
Pepper to taste
1 lb Angel Hair or Capellini - uncooked
1 ts Balsamic vinegar OR fresh lemon juice
1 -Yellow bell pepper

Directions
Step #1 Roast & peel the peppers as follows: Place the peppers directly over a gas jet of the range (or under a pre-heated broiler), turning them often with a pair of tongs, until blackened on all sides.
Step #2 Transfer them to a bowl & cover tightly with plastic wrap.
Step #3 Let them stand until cool.
Step #4 Cut the peppers in half lengthwise & remove the stems & seeds.
Step #5 Scrape off the blackened skin of the pepper.
Step #6 Cut the peppers into 1/4-inch pieces.
Step #7 Toss the sliced roasted peppers with the basil, balsamic vinegar or lemon juice, garlic, salt & pepper in a small bowl.
Step #8 (This salsa may be prepared & put in the fridged up to one day in advance.
Step #9 ) Prepare pasta according to package directions.
Step #10 While pasta is cooking, heat the oil in a large skillet over medium-high heat.
Step #11 Add the chicken & stir until cooked through, about 4 mins.
Step #12 Add the roasted pepper salsa & stir 30 seconds, scraping up the brown bits that stick to the pan.
Step #13 Remove the skillet from the heat.
Step #14 Drain the pasta, reserving 1/4 c of the cooking water.
Step #15 Add the water & the chicken broth to the skillet with the chicken mixture.
Step #16 Return the pasta to the pot.
Step #17 When the chicken is cooked through, transfer the contents of the skillet to the pot & heat over high heat until the sauce is boiling & reduced enough to lightly coat the pasta.
Step #18 Spice up to taste.
Step #19 Serve hot.
