Anglo-indian Curry Sauce Recipe

Ingredients
  • pn Nutmeg
  • 8 Free Range Eggs, Size 2
  • 1 oz Butter
  • 1 1/2 lb Leeks
  • 2 oz Grated Caerphilly Cheese or cheddar
  • 1 pt Milk
  • 1 tb Heaped, Cornflour
  • 1/2 ts Salt

Directions
  • Step #1 Trim the leeks & wash them thoroughly.
  • Step #2 Cut into 1 inch lengths.
  • Step #3 Put the milk ( or milk / cream mixture) into a non-stick saucepan with the leeks & bring to the boil.
  • Step #4 If you like your leeks soft rather than slightly crisp, let them boil for a min or two.
  • Step #5 Remove the leeks (leaving the milk in the pan) & put them into a baking dish.
  • Step #6 Put the eggs cold into boiling water & cook for exactly five mins.
  • Step #7 Remove, cool & shell.
  • Step #8 The eggs should be soft in the middle but the whites will be firm.
  • Step #9 Lay the shelled eggs on the leeks.
  • Step #10 Make a white sauce by whisking in the cornflour, salt and butter & bring carefully to the boil while you whisk.
  • Step #11 When the sauce is smooth, thick & glossy, pour it over the eggs & leeks, Sprinkle top the top this with nutmeg & grated cheese & put it under the grill until it is hot & bubbling.
  • Step #12 Don't leave it too long or the eggs will be over-cooked.
  • Step #13 Serve at once with lots of crusty bread and butter.
