Step #1 --FILLING----- 3 c Apples; Tart, Sliced 1 tb Lemon Juice 1 ts Cinnamon 3/4 c Sugar 2 tb Flour; Unbleached 8 oz Cream Cheese; Softened 1 ea Egg; Large CAKE: Mix yeast, 4 T sugar, salt, & 3/4 c flour.
Step #2 Add butter to milk.
Step #3 Heat until very warm (120-130 degrees F.

Step #5 slowly add milk to flour mixture.
Step #6 Beat for 2 mins.
Step #7 Add egg & 1/2 c flour.
Step #8 Beat with an electric mixer on high speed for 2 mins.
Step #9 Mix in enough flour to form a soft dough.
Step #10 Knead for 5 to 10 mins, until dough is shiny & elastic.
Step #11 place this in greased bowl & let rise for 1 hr or until doubled in bulk.
Step #12 Pat dough into well-greased 10-inch springform pan pressing the dough 1 1/2 inches up the sides of the pan.
Step #13 FILLING: Toss apples with lemon juice, cinnamon, 1/4 c sugar, & 2 T of flour.
Step #14 Arrange in rows on top of the dough.
Step #15 Beat together cream cheese, 1/2 c sugar, & egg.
Step #16 Spread over apples.
Step #17 Let rise in warm place for 1 hr.
Step #18 bake this at 350 degrees F.
Step #19 for 30 mins.
Step #20 Best when served warm.
