Step #1 In a med bowl stir this together flour, baking powder, oat bran, salt, brown sugar, nutmeg, baking soda, & cinnamon.
Step #2 Set aside.
Step #3 In a small bowl mix buttermilk, & oil, egg whites, Add to dry ingredients; stir just till moistened.
Step #4 stir in the shredded apple.
Step #5 Store batter, tightly covered, in the refrigerator for up to 5 days.
Step #6 To bake, spray muffin c with non-stick spray coating.
Step #7 Spoon about 1/4 c batter into each muffin c.
Step #8 Bake in a 375 deg F oven for 18-20 mins or till a toothpick inserted near the center comes out clean.
Step #9 Makes 12 muffins.
Step #10 Per serving: 124 calories, 4 g protein, 162 mg sodium, 1 mg cholesterol, 3 g fat, 22 g carbohydrates, 162 mg potassium.
