Directions
  • Step #1 Wash 3 lbs tart apples; remove blossom ends & stems.
  • Step #2 Do not peel or core.
  • Step #3 Cut apples in small chunks.
  • Step #4 In 8- to 10-quart kettle or Dutch oven mix apples & enough water to cover (about 5 c).
  • Step #5 Cover; bring to boiling over high heat.
  • Step #6 Reduce heat; simmer till apples are soft, 20 to 25 mins.
  • Step #7 Strain apples & liquid through jelly bag; measure 4 c juice.
  • Step #8 In kettle mix apple juice & 3 c sugar till dissolved.
  • Step #9 Bring to full rolling boil.
  • Step #10 Boil hard, uncovered, till syrup sheets of metal spoon, 10 to 12 mins.
  • Step #11 Remove from heat; quickly skim off foam.
  • Step #12 Ladle into hot sterilized jars to within 1/2 inch of top.
  • Step #13 Wipe rims.
  • Step #14 Seal with metal lids & screw bands.
  • Step #15 Invert jars; turn upright & cool.
