Lamb Cutlets Shrewsbury Recipe

Ingredients
  • 1/3 c Strong coffee
  • 1/3 c Honey
  • 2 tb Worcestershire sauce
  • Boiled rice
  • 1/2 ts Cinnamon
  • 1/4 ts Cardamom
  • Fresh rosemary for garnish
  • Prunes, pitted
  • 6 Lamb cutlets
  • 30 g Ghee
  • 1/4 ts Mace
  • 1/4 tb Lemon juice
  • 60 g Butter
  • 1/4 ts Mixed spice

Directions
  • Step #1 Melt butter on a low heat, then honey, mix in coffee, Worcestershire sauce, spices & lemon juice.
  • Step #2 Cover & remove this from heat.
  • Step #3 Melt ghee in a large frying pan, add cutlets & fry until browned on both sides.
  • Step #4 Return sauce to heat, bring to boil & pour over cutlets.
  • Step #5 serve this with boiled rice & pitted prunes, heated through in the sauce, if desired.
  • Step #6 Garnish with rosemary.
