Lamb Cutlets With Spinach Recipe

Ingredients
  • 2 tb Moutard de Meaux
  • 2 tb Finely sliced mint
  • 1 Rack of lamb trimmed of all fat
  • Salt
  • Juice of 1/2 lemon
  • Pepper

Directions
  • Step #1 Pre-heat oven to 220'C.
  • Step #2 Rub lemon juice, salt & pepper into the flesh side of the rack of lamb & spread liberally with mustard to make a thick coating.
  • Step #3 Place meat, mustard side up, on a rack in an oven dish.
  • Step #4 Bake the meat on the top shelf of the oven for 20 mins.
  • Step #5 Remove & cool slightly, before pressing sliced mint into the crusty surface of the meat.
  • Step #6 Cover & put in the fridge overnight before cutting into individual cutlets.
  • Step #7 TO SERVE: tie a piece of banana leaf around the end of each cutlet with a couple of long chives.
