Lamb Sirloin With Hazelnut Sauce Recipe

Ingredients
  • 1 oz Cellophane noodles; dry
  • 1 c Peanut oil plus 2 tb
  • 1 tb Soy sauce
  • 1/4 ts Hot pepper oil
  • 1 ts Cornstarch
  • 1 Eggwhite
  • 1 ts Salt
  • 1/2 lb Leg of lamnb; boned

Directions
  • Step #1 Slice lamb into thin matchlike shreds.
  • Step #2 Mix with egg white, 1/2 the salt & the cornstarch.
  • Step #3 let this stand 5 mins.
  • Step #4 Heat the 2 tb of peanut oil in a skillet or wok.
  • Step #5 Quickly stir-fry the lamb for about 2 mins.
  • Step #6 Add the soy sauce & pepper oil.
  • Step #7 Mix well & place on warm platter.
  • Step #8 Heat 1 c of peanut oil to 375 degrees.
  • Step #9 Deep-fry the cellophane noodles for a second or two.
  • Step #10 Do not burn.
  • Step #11 Drain on paper towels.
  • Step #12 Sprinkle top with remaining salt ad place at ends of lamb shreds.
