Larry's Crispy Potatoes Recipe

Ingredients
  • 1/3 lb Plum tomatoes; seed, sliced
  • Fresh ground pepper to taste
  • 6 oz Whole kernel corn
  • Juice of one lime
  • 3 Carrots; grated
  • 4 6 oz. swordfish steaks
  • 3 ts Olive oil
  • 1/2 lb Fresh string beans;sliced
  • 1/2 sm Onion;sliced
  • 1 ts Red wine vinegar
  • 4 ts Fresh cilantro; sliced
  • 1 Garlic clove; mashed

Directions
  • Step #1 Preheat broiler.
  • Step #2 SALSA: In a bowl, corn, tomatoes, mix carrots, string beans, and onion.
  • Step #3 Add cilantro, vinegar, garlic, lime juice, & pepper.
  • Step #4 Brush both sides of fish with oil.
  • Step #5 FISH: Broil 5 mins per side (or 10 mins total per inch of thickness).
  • Step #6 When fillets are firm in the middle, transfer to serving dish & top this with salsa.
