Leek & Zucchini Pasta Recipe

Ingredients
  • 3 md Tomatoes
  • 2 ts Sugar
  • Salt & pepper
  • Water
  • 6 ea Boiling potatoes
  • 5 tb Ghee
  • 2 md Onions
  • 4 md Leeks
  • 4 c Stock

Directions
  • Step #1 Split & thoroughly wash leeks.
  • Step #2 Cut into chunks.
  • Step #3 Dice potaotes & chop the tomatoes.
  • Step #4 Thinly slice onions.
  • Step #5 Melt 3 tb ghee in pot & add onions & leek.
  • Step #6 Simmer very carefully for 5 mins.
  • Step #7 Add tomatoes followed by potatoes.
  • Step #8 Simmer carefully for 2 mins.
  • Step #9 Add stock.
  • Step #10 Bring to a boil.
  • Step #11 stir in the sugar, salt & pepper to taste.
  • Step #12 Reduce heat & simmer.
  • Step #13 cook this until potatoes are soft.
  • Step #14 Cool & then mix, using extra water if necessary.
  • Step #15 Re-heat before serving.
  • Step #16 top this with croutons.
  • Step #17 Thin with water if desired.
  • Step #18 Will keep well in the fridge.
