Lemon Herb Roast & Vegetables Recipe

Ingredients
  • 1 ts Dill weed
  • 1/2 c Hot skimmed milk
  • 1 Clove minced garlic
  • 1 ts Grated lemon peel
  • Paprika
  • 1/2 c sliced onion
  • 1/8 ts White pepper
  • 6 sm Baking potatoes
  • 2 tb Unsalted margarine
  • 1 tb Parsley

Directions
  • Step #1 1.
  • Step #2 Bake potatoes until done.
  • Step #3 Cool.
  • Step #4 2.
  • Step #5 Saute onions & garlic in unsalted margarine.
  • Step #6 Scoop out potatoes & mash.
  • Step #7 Beat in onion mixture, hot skimmed milk, lemon & pepper.
  • Step #8 Mix in dill & parsley.
  • Step #9 Refill skins.
  • Step #10 Sprinkle top with paprika.
  • Step #11 3.
  • Step #12 bake this at 400F for 30 mins.
  • Step #13 Variation: add 1/2 oz grated cheddar cheese on top of each potato before baking the final time.
