Lemon Snow Cake Recipe

Ingredients
  • 2 c Flour
  • 1 tb Water
  • 2 ts Baking Powder
  • 1/2 ts Baking Soda
  • 3 Lemons
  • 1 c Milk
  • 1/2 ts Salt
  • 2 Eggs
  • 6 tb Unsalted Butter
  • 1/2 c Sugar, Or More, If Needed

Directions
  • Step #1 preheat your trusty oven to 400?F.
  • Step #2 Butter standard size muffin tins.
  • Step #3 Finely grate the zest from the lemons, removing only the bright yellow portion of the peel.
  • Step #4 Set the lemons aside.
  • Step #5 mix the zest, the water & 1/4 c of the sugar in a small saucepan.
  • Step #6 Stir over medium heat for about 2 mins, just until the sugar dissolves.
  • Step #7 Add the butter & stir until melted, about 1 min longer.
  • Step #8 Set aside.
  • Step #9 With a sharp knife remove & discard all the remaining peel from the lemons.
  • Step #10 Cut the lemons crosswise into slices about 1/4 inch thick; discard any seeds.
  • Step #11 You will need about 12 nicely shaped slices.
  • Step #12 Put about 1 tsp of the remaining sugar in the bottom of each prepared muffin c & place a lemon slice on top.
  • Step #13 In a medium bowl, baking powder, stir & toss together the flour, baking soda and salt.
  • Step #14 Set aside.
  • Step #15 In a larger bowl whisk together the eggs, milk and the reserved lemon mixture until smooth.
  • Step #16 Add the mixd dry ingredients & stir just until mixed.
  • Step #17 Spoon into the tins, filling about 3/4 full.
  • Step #18 bake this until a toothpick comes out clean, 15 - 20 mins.
  • Step #19 as soon as possible invert the tins; the muffins should fall out.
  • Step #20 If they resist, nudge them with a knife.
  • Step #21 Makes about 12 standard muffins.
