Apricot & Walnut Chutney Recipe

Ingredients
  • 1 lb -Dried apricots
  • 2 ts Salt
  • 3 lb Apricots; -OR-
  • 1 ts English mustard
  • 2 Garlic cloves - peeled, crushed
  • 1 lb Onions; peeled, sliced fine
  • 1 1/2 pt Cider vinegar
  • 8 oz Walnuts - very roughtly sliced
  • 1 lb Light brown sugar
  • 1/2 ts Powdered allspice
  • 2 Oranges
  • 8 oz Sultanas

Directions
  • Step #1 Split & stone the fresh apricots & chop roughly.
  • Step #2 If using dried apricots, put them to swell overnight in water.
  • Step #3 Boil the sliced onions for a few moments to soften them, otherwise you always seem to get a few hard bits.
  • Step #4 Drain.
  • Step #5 Put all the ingredients except the walnuts into a large preserving pan & bring to the boil.
  • Step #6 Turn down the heat & cook carefully, stirring regularly, for 1 1/2 hrs until the mixture is thick & jammy.
  • Step #7 stir in the the walnuts.
  • Step #8 Pot while hot in warm sterilised jars.
  • Step #9 Seal.
  • Step #10 Makes about 6 lbs.
