Ingredients
  • 4 tb Apricot juice; canned
  • 5 tb Cake flour
  • 1 c Cream; whipped
  • 2 tb Lemon juice
  • 1 c Apricot pulp; use cand fruit
  • 1 ds Salt
  • 4 tb Sugar

Directions
  • Step #1 mix sugar, flour & salt in top of a double boiler; add apricot juice & mix thoroughly.
  • Step #2 Sieve well drained apricots to obtain 1 c.
  • Step #3 pulp & add slowly to flour mixture, stirring until mixed.
  • Step #4 Place over rapidly boiling water & cook 5 to 7 mins, stirring constantly.
  • Step #5 Add lemon juice.
  • Step #6 Chill.
  • Step #7 Fold in cream.
  • Step #8 Makes 3 c.
