Apricot Wine Recipe

Ingredients
  • Drained
  • 3/4 c Whole wheat flour
  • Vanilla yogurt
  • 3 Eggs
  • 2 tb Cornstarch
  • 1 1/2 c Low fat milk
  • 2 tb Butter or margarine
  • Oil
  • 1 1/2 c Orange juice
  • 1/4 ts Cinnamon
  • 1 cn apricot halves,
  • 1/2 c sliced walnuts
  • 1/2 c Seedless raisins

Directions
  • Step #1 mix milk,eggs,flour,butter & cinnamon in a mixer or food processor.
  • Step #2 Process until smooth.
  • Step #3 Cover & put in the fridge at least one hr or until mixture is consistency of heavy cream.
  • Step #4 Lightly brush bottom & sides of a 7" skillet with oil.
  • Step #5 Heat skillet,briefly,over medium low heat.
  • Step #6 Pour in a scant 1/4 c batter.
  • Step #7 Tip skillet to coat the bottom with batter.
  • Step #8 Cook crepe until top is set & the underside is lightly browned,about 2 to 3 mins.
  • Step #9 Turn crepe with a metal spatula & cook other side about 1 min.
  • Step #10 Slip crepe onto wax paper & repeat with remaining batter,stacking each crepe between wax paper.
  • Step #11 Set aside.
  • Step #12 mix orange juice & cornstarch in a medium saucepan.
  • Step #13 Heat to boiling.
  • Step #14 Boil mixture 1 min,stirring constantly,until it is thick & clear.
  • Step #15 stir in the raisins and walnuts.
  • Step #16 remove this from heat & stir in the apricots.
  • Step #17 Spoon small amount of hot filling down center of each crepe.
  • Step #18 Fold crepe over filling.
  • Step #19 Garnish with a dollop of vanilla yogurt.
