Arcadian Eight Bean Chili Recipe

Ingredients
  • 1/2 c Ground dried Poblano chili
  • lg Onions -- peeled/sliced
  • 1/4 c Ground cinnamon
  • 1/4 c Coriander seeds --
  • Ground/toast
  • Salt to taste
  • 1/4 lb Ea of the following dried
  • 12 oz Beer
  • 1/4 c Paprika
  • 2/3 c Minced garlic
  • Black, red, pinto,cranberry
  • Beans:kidney, white, pink
  • & navy
  • Taste
  • 108 oz Italian plum..
  • 1 lb Bacon
  • 1/4 c Cayenne pepper -- or to
  • Peppers
  • Tomatoes -- with juice

Directions
  • Step #1 In a large pot, soak the beans together overnight in water to cover.
  • Step #2 Drain & add fresh water to cover.
  • Step #3 Cook at a simmer for 1 1/2 hrs or until beans are just tender.
  • Step #4 While the beans are simmering, heat a large skillet.
  • Step #5 Mince the bacon & cook it until it begins to crisp.
  • Step #6 Add the onions & garlic & cook over med-heat/flame for 5 mins.
  • Step #7 Add all the spices & the ground Poblanos & cook another 5 mins.
  • Step #8 Add the tomatoes with their juice & the beer.
  • Step #9 Simmer for half an hr.
  • Step #10 In another pan, cook the beef until the pink color disappears.
  • Step #11 Drain adn add it to tomatoe mixture.
  • Step #12 When the beans are fully cooked, reserving the liquid, drain them, & add the beans to the meat/tomato mixture.
  • Step #13 Salt to taste & let the mixture simmer for about 1 hr.
  • Step #14 If it is too dry, add some of the bean liquid.
