Arni Souvlakia (shish-kabob) Recipe

Ingredients
  • 2 ts Dried rigani or oregano
  • 1 Lemon
  • 3 Bay leaves; broken in pieces
  • 1 Salt & pepper
  • 2 Garlic cloves; crushed
  • 1/2 c Olive oil
  • 1 Leg lamb , boned
  • 1/2 c Dry white wine

Directions
  • Step #1 Serves: 6-8 Cooking time: 15 mins Cut lamb into 4 cm (1 1/2 inch) cubes & place this in a glass or earthenware dish.
  • Step #2 add in the remaining ingredients to lamb, mix well to coat meat, & cover.
  • Step #3 Leave in refrigerator to marinate for 12-24 hrs, stirring meat every once in awhile.
  • Step #4 Lift lamb out of marinade & thread onto metal skewers.
  • Step #5 Pieces of bay leaf may be placed between lamb cubes.
  • Step #6 Cook under a hot grill or over glowing charcoal, running & basting frequently with marinade.
  • Step #7 Grill for 15 mins or until cooked to taste.
  • Step #8 Place on a platter & garnish with parsley & lemon wedges.
  • Step #9 Serve hot.
