Aunt Mildred's Noodle Kugel Recipe

Ingredients
  • 2 ea Stick Cinnamon
  • 2 qt Boiling Water
  • 15 lb Green Tomatoes
  • 1 x Handful Cloves
  • 1/2 tb Powdered Alum
  • 1 c Pickling Salt
  • 5 c Sugar
  • 2 c Cider Vinegar

Directions
  • Step #1 Green tomatoes should be fresh picked & sliced.
  • Step #2 --- ------------------ Arrange the tomatoes in layers in a large bowl or pickle crock, sprinkling the salt between the layers.
  • Step #3 let this stand overnight.
  • Step #4 The next day, Sprinkle top with the alum, drain, & pour the boiling water over them.
  • Step #5 let this stand for 20 mins.
  • Step #6 Drain, rinse, and drain again.
  • Step #7 In an enamel or stainless stell preserving kettle mix cider vinegar, sugar & the spices, tied in a cheesecloth bag.
  • Step #8 (The spice bag should be kept in the syrup right up to the very end.
  • Step #9 ) Bring to a boil, stirring until sugar is dissolved & boil rapidly for 3 mins.
  • Step #10 Pour the syrup over the tomatoes & let this stand overnight.
  • Step #11 Next day, drain off syrup & bring to a boil.
  • Step #12 Pour over tomatoes & let this stand again overnight.
  • Step #13 On the fourth day, put syrup & tomatoes into the kettle, bring to a boil & let simmer until the tomatoes are transparent.
  • Step #14 Pack the tomatoes into hot jars.
  • Step #15 Boil the syrup until it becomes quite thick or spins a long thread.
  • Step #16 Remove the spice bag & pour the syrup over the fruit, filling the jars and seal.
  • Step #17 Makes 8 Quarts.
