Australian Outback Beer Sauce Recipe

Ingredients
  • 1/2 ts Salt
  • 2 c Flour
  • Salt & pepper
  • 1 ts Water
  • 1/4 c Water; ----pie base-----
  • 2 tb Flour
  • 1 pk Puff pastry;
  • 2/3 c Water
  • 2 Beef stock cubes
  • 1 1/2 lb Steak; minced
  • 1 Egg yolk
  • 2 oz Beef drippings ----pie top-----
  • 1 1/2 c Water
  • 1 pn Nutmeg
  • 1 ts Soy sauce

Directions

  • Step #2 DE Making the filling: Place meat into the pan, stir over low heat/flame until meat is well browned.
  • Step #3 Drain off any surplus fat.
  • Step #4 Add crumbled stock cubes, water, simmer carefully for 20 min, salt, reduce heat, stir until boiling, cover, pepper & nutmeg, remove this from heat.
  • Step #5 mix extra water and flour, stir until flour mixture is smooth.
  • Step #6 Add flour mixture to meat, stir until mixd.
  • Step #7 Return to heat, stir until meat boils and thickens.
  • Step #8 Add soy sauce (to give brown colour), stir until mixd.
  • Step #9 Simmer, uncovered, 5 to 10 min; remove this from heat allow to become cold.
  • Step #10 Making the pie base: Sift flour & salt into basin.
  • Step #11 Place water and dripping into saucepan, stir until dripping melts; remove this from heat.
  • Step #12 Make a well in centre of dry ingredients, add liquid, stir until mixd.

  • Step #14 If you're in a hurry, just use premade (bought) pastry.

  • Step #16 -JN) Turn out onto lightly floured surface, knead lightly.
  • Step #17 Roll out pastry to line eight greased pie tins.
  • Step #18 [We use "real" aluminium 6 or 8 in pie casings - JN] Cut excess pastry around sides of pie plates using a sharp knife.
  • Step #19 Fill centres with cold meat filing.
  • Step #20 Pie crust: Roll out puff pastry on lightly floured surface, cut out rounds for top of pies, use a saucer as a guide.
  • Step #21 Wet edges of base pastry, & carefully press tops into place, trim around edges with a sharp knife.
  • Step #22 Brush tops with mixd egg-yolk & water.
  • Step #23 Cooking: Bake in hot oven 5 mins or until golden brown, reduce heat to moderate, cook further 10 min.
