Lima Bean Salad Recipe

Ingredients
  • 1 c Thinly sliced celery
  • 1 ea Beaten egg
  • 1 ea Small onion sliced
  • 1 c Soft wholewheat crumbs
  • 1/4 ts Black pepper
  • 1 c Skim milk
  • 1/4 c Butter
  • 1/2 c sliced peanuts
  • 1/3 c Flour
  • 1 ts Salt
  • 1 c Dry Lima Beans
  • 1 1/2 c sliced carrots
  • 1 x American cheese slices

Directions
  • Step #1 Soak beans over night in cold water.
  • Step #2 Drain, & cook in water to cover until tender, rinse, about 1 1/2 hrs.
  • Step #3 Drain beans & mash.
  • Step #4 Melt butter in saucepan, cover, saute 3 mins, add celery, add onion, cook until tender.
  • Step #5 stir in the flour & cook 2 mins.
  • Step #6 Add milk stirring until thickened.
  • Step #7 remove this from heat, stir in the beaten egg,, salt, add bread crumbs, carrots, pepper & peanuts.
  • Step #8 Spoon mixture into a greased 8 x 4 inch loaf pan & bake this at 375 degrees for 35 - 45 mins.
  • Step #9 Arrange cheese slices on top, return to the oven until cheese melts.
