Bagels (breadmaker) Recipe

Ingredients
  • 1 tb Bs sugar
  • 2 tb Bs margarine
  • 4 1/2 To 5 c all-purpose flour
  • 3 tb Bs sugar
  • Water
  • 1 tb Bs salt
  • 1 Egg white
  • 2 Active yeast

Directions
  • Step #1 Mix 1 1/2 c flour, 3 Tbs sugar, 1 Tbs salt & yeast.
  • Step #2 Heat 1 1/2 c water & margarine to 120-130 degrees.
  • Step #3 Add to dry ingredients; beat 2 mins at medium speed.
  • Step #4 Add 1/2 c flour; beat at high speed 2 mins.
  • Step #5 stir in the more flour to make a stiff dough.
  • Step #6 On floured board, knead 8-10 mins.
  • Step #7 Set in greased bowl; turn to grease top.
  • Step #8 Cover; let rise in warm, draft-free place 1 hr.
  • Step #9 Punch dough down.
  • Step #10 Cover; let rest 15 mins.
  • Step #11 In a large skillet heat 1-inch water over medium low heat to a simmer; add in the remaining sugar & salt.
  • Step #12 Divide dough into 12 pieces; shape 3 pieces into smooth balls.
  • Step #13 With floured finger, poke a 1-inch hole in each.
  • Step #14 Drop bagels into simmering water.
  • Step #15 Cook 3 mins.
  • Step #16 Turn & cook 2 mins.
  • Step #17 Turn again; cook 1 min more.
  • Step #18 Drain on towels.
  • Step #19 Repeat shaping & cooking rest of dough.
  • Step #20 Place on greased baking sheet.
  • Step #21 Mix egg white & 1 Tbs water; brush on bagels.
  • Step #22 Sprinkle top with coarse salt, sesame, caraway or poppy seed if desired.
  • Step #23 bake this at 375 degrees for 20-25 mins.
  • Step #24 remove this from sheets.
  • Step #25 Cool.
  • Step #26 Fleischmann's.
