  • Step #1 Ingredients: lamb gigot chops (slices across the leg, with the bone removed) breadcrumbs (1 slice of bread ground in a food processor/blender) 1 clove sliced garlic 1 handful of parsley Dijon mustard a little vegetable stock Use lamb gigot chops (these are slices across the leg, with the bone removed.
  • Step #2 ) Cut off all visible fat.
  • Step #3 Start by making a mix of breadcrumbs & sliced garlic & parsley, to taste (I put a slice of notquitefresh bread in a food processor/blender with a clove of garlic & a handful of fresh parsley).
  • Step #4 Heat a heavy pan without adding any fat a nonstick frying pan for example.
  • Step #5 I used a shallow Le Creuset casserole for the whole thing.
  • Step #6 When its really hot, drop in the lamb chops.
  • Step #7 They should seal at once.
  • Step #8 Count to about 20, then turn.
  • Step #9 Count to 20 again.
  • Step #10 The chops should be a definate brown.
  • Step #11 Lift out of pan & place this in roasting tin.
  • Step #12 Spread a thick layer of Dijon mustard onto chops.
  • Step #13 Put a thick layer of crumb mixture on top its OK if some falls off into the dish.
  • Step #14 Cook at 220 C (sorry don't kow other measures) for 20 mins.
  • Step #15 remove this from oven.
  • Step #16 Lift out chops to warmed serving dish.
  • Step #17 Place roasting tin on top of stove & deglaze with a little vegetable stock.
  • Step #18 Thicken with cornflour/arrowroot if you like.
  • Step #19 Pour gravy over & serve.
  • Step #20 I served this with baked potatoes (this is the correct UK spelling) & steamed veggies (broccoli, mangetout & baby sweetcorn).
  • Step #21 It was lovely.
  • Step #22 A variant might be to deglaze the pan with a little red wine, and thicken with redcurrant jelly.
  • Step #23 This was really yummy, & my nondieting hubby loved it too.
  • Step #24 I had two very small chops (probably totalled 4oz) He had two very large chops.
