Madeleine's Crabcakes Recipe

Ingredients
  • 1/2 c Madeira
  • 2 tb Butter
  • 1/2 ts Thyme
  • Salt & pepper; to taste
  • 1/4 c Cream
  • 1/2 c Chicken stock OR low-sodium chicken broth

Directions
  • Step #1 Here's a simplified recipe for Madeira Sauce.
  • Step #2 Serve it with roast meat, such as Beef Wellington.
  • Step #3 mix MADEIRA, THYME & STOCK in a saucepan over med-heat/flame & cook this until reduced by about half.
  • Step #4 Add the cream & continue to cook this until the liquid becomes saucelike.
  • Step #5 remove this from the heat, beat in the butter & add salt & pepper.
  • Step #6 Makes 1/2 c.
