Manoush Simonian's Shish Kebab Recipe

Ingredients
  • 1 c Wild rice
  • 4 c Water
  • 2 tb Butter
  • 1 ts Salt
  • 1 1/2 c Sliced mushrooms
  • 1/4 c Beef stock or water
  • 1 ea Sweet green pepper sliced
  • 3 ea Stalks celery, sliced
  • 1 x Salt & pepper to taste
  • 2 ea Onions, sliced
  • 6 ea Slices bacon

Directions
  • Step #1 Rinse rice in colander with cold running water.
  • Step #2 In large saucepan, bring water & salt to boil; add rice; reduce heat to medium low and simmer, covered 30 mins.
  • Step #3 Drain.
  • Step #4 Meanwhile, over medium high heat, in skillet, fry bacon 3 to 5 mins or until crisp.
  • Step #5 Transfer bacon to paper towel; pat dry & chop.
  • Step #6 Drain all but 1 tbsp bacon drippings from skillet; add onions & cook, stirring 3 to 5 mins or until tender.
  • Step #7 Add green pepper, celery & mushrooms; cook, stirring 3 mins.
  • Step #8 Transfer vegetable mixture to 8 c casserole.
  • Step #9 stir in the butter, beef stock & rice.
  • Step #10 Bake covered, 15 to 20 mins in 350 F degree oven until rice is tender.
  • Step #11 Spice up to taste with salt & pepper.
