Banana Chip Cake With Whipped Mocha Frosting Recipe

Ingredients
  • "A Taste of Homecoming" by
  • 1 ts Baking soda
  • 1 ts Vanilla extract
  • Daisy King
  • 2 Eggs, separated
  • 2 c All purpose flour
  • Sliced bananas, for garnish
  • 1 ts Salt
  • 2/3 c Buttermilk
  • 1/2 c sliced nuts
  • 1/3 c Oil
  • Whipped cream
  • 1 1/3 c Sugar
  • 1 ts Baking powder
  • 1 c Mashed ripe bananas

Directions
  • Step #1 Grease two 8-in round pans well & dust with flour.
  • Step #2 Beat egg whites until frothy.
  • Step #3 slowly beat in 1/3 c of sugar.
  • Step #4 Continue beating until very stiff & glossy.
  • Step #5 Sift remaining sugar, flour, baking powder, soda & salt into another bowl.
  • Step #6 Add oil, mased bananas, half of buttermilk & vanilla extract.
  • Step #7 Beat 1 min at medium speed on mixer.
  • Step #8 Scrape sides & bottom of bowl constantly.
  • Step #9 add in the remaining buttermilk & egg yolks.
  • Step #10 Beat 1 more min.
  • Step #11 Fold in beaten egg whites.
  • Step #12 Fold nuts in carefully.
  • Step #13 pour this into prepared pans.
  • Step #14 Bake in a 350 degree oven for 30-35 mins.
  • Step #15 Cool.
  • Step #16 Frost with whipped cream.
  • Step #17 Decorate with sliced bananas.
