Chocolate Mocha Cheesecake Recipe

Ingredients
  • 4 (1 oz) squares semisweet chocolate, sliced
  • 2 eggs
  • 1/3 c butter, melted
  • 1/2 c brown sugar
  • 12 oz cream cheese, room temperature
  • 3 tbsps coffee flavored liqueur
  • 2 tbsps cornstarch
  • 1 1/2 c chocolate cookie crumbs

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 Grease an 8 inch springform pan.
  • Step #3 In a medium bowl, mix cookie crumbs & butter.
  • Step #4 Mix well & press into the bottom of springform pan.
  • Step #5 In the top of a double boiler, heat chocolate, stirring every once in awhile, until chocolate is melted & smooth.
  • Step #6 Remove from heat & allow this to cool to lukewarm.
  • Step #7 In a large bowl, beat cream cheese, brown sugar & cornstarch until smooth.
  • Step #8 Beat in the eggs one at a time.
  • Step #9 Blend in the coffee liqueur.
  • Step #10 Fold 1/3 of the filling into the melted chocolate, then pour the chocolate mixture back into the filling & mix until no streaks remain.
  • Step #11 Pour into crust.
  • Step #12 Bake in the preheated oven for 60 mins, or until filling is set.
  • Step #13 Allow to cool to about room temp, then put in the fridge at least 4 hrs before serving.
