Cherry Berry Pie Recipe

Ingredients
  • 2 tsps white sugar
  • 1 (16 oz) can pitted sour cherries, drained with liquid reserved
  • 1/4 tsp salt
  • 3/4 c white sugar
  • 2 (9 inch) pie shell
  • 2 tbsps cornstarch
  • 2 tbsps quick-cooking tapioca
  • 1 tbsp lemon juice
  • 1 (10 oz) package frozen strawberries, thawed

Directions
  • Step #1 Preheat oven to 400F degrees F (200 degrees C).
  • Step #2 In a medium saucepan mix 3/4 c sugar, cornstarch, tapioca, & salt.
  • Step #3 Mix well, then stir in the reserved cherry & strawberry liquids.
  • Step #4 Stirring constantly, cook mixture over med-heat/flame 5 to 10 mins or until it begins to thicken.
  • Step #5 Remove from heat.
  • Step #6 Spoon fruit filling into pastry-lined pan.
  • Step #7 Top with second pastry.
  • Step #8 Seal & flute edges, then make steam vents in top crust.
  • Step #9 Sprinkle top with 2 tsps sugar.
  • Step #10 Cover edges of pastry with aluminum foil to prevent excessive browning.
  • Step #11 Bake in preheated oven for 30 to 35 mins or until golden brown.
  • Step #12 Remove foil during last 15 mins of baking to allow pastry edges to brown.
