Marinated Vegetables (ellen Cleary) Recipe

Ingredients
  • 1 c Celery, cut diagonally
  • 1/4 c Fat-free Italian Dressing
  • 2 c Fresh Broccoli
  • 1/8 ts Red pepper
  • 1 cn 14-oz, artichoke hearts, in water
  • 3/4 c Carrots, cut diagonally
  • 1/4 c Pitted olives
  • 1/2 c Red pepper, sliced

Directions
  • Step #1 Steam broccoli & carrots till crisp; rinse in cold water to stop the cooking process.
  • Step #2 Toss broccoli, carrots & remaining veggies in a large bowl.
  • Step #3 Add dressing & red pepper & toss again.
  • Step #4 Chill a few hrs; serve on a large platter.
