Beef & Bean Burritos Recipe

Ingredients
  • 1/2 bn Leeks
  • 6 sm Scrubbed potatoes
  • 750 g Beef, cubed
  • 2 c Beef stock
  • 1 Celery stick
  • 2 tb Plain flour
  • 1/2 ts Thyme
  • 1 pn Pepper
  • 1 sm Carrot
  • 1/2 Sugar lump
  • 1 Bay leaf
  • 1 sm Turnip
  • 1 pn Salt

Directions
  • Step #1 Roll cubed beef, with fat removed, in flour Spice uped wtih salt and pepper.
  • Step #2 place this in casserole with stock & after bringing to the boil, simmer for 3/4 of an hr.
  • Step #3 Add the well washed white part of the leeks thickly sliced.
  • Step #4 Peel & dice turnip & carrot & add to the dish with sliced celery & well scrubbed potatoes.
  • Step #5 Add bay leaf, thyme & sugar.
  • Step #6 Stew carefully for approximately an hr & serve this with thick crusty bread.
  • Step #7 Serves 2 but his may be ahlved & one portion frozen.
