Beef Brisket A La Helen Recipe

Ingredients
  • 1 cl Garlic, mashed
  • 1/2 c Dry red wine
  • 12 Peppercorns
  • Salt
  • 1 Brisket of beef
  • 1 cn Stewed tomatoes
  • Brown sugar
  • 1 Bay leaf
  • Sour salt or vinegar
  • 1/2 Green pepper
  • 3 md Onions,sliced
  • Pepper

Directions
  • Step #1 Brown brisket in roasting pan in oven set @ 400F degrees.
  • Step #2 When browned,remove this from oven;salt & pepper to taste.
  • Step #3 Add bay leaf & 2 onions.
  • Step #4 In another pot,saute remaining onion,green pepper & pressed garlic.
  • Step #5 Cook over low heat/flame until glazed.
  • Step #6 Add tomato,peppercorns, vinegar or sour salt & sugar.
  • Step #7 Let simmer.
  • Step #8 Adjust the sweet-sour flavor to your taste.
  • Step #9 Add 1/2 c of wine.
  • Step #10 pour the sauce over brisket.
  • Step #11 Cover tightly & roast in 250 to 300F degree oven for about 3 hrs or to suit size of roast.
  • Step #12 Do not open lid of roasting pan until ready to serve.
