Ingredients
1 cl Garlic, mashed
1/2 c Dry red wine
12 Peppercorns
Salt
1 Brisket of beef
1 cn Stewed tomatoes
Brown sugar
1 Bay leaf
Sour salt or vinegar
1/2 Green pepper
3 md Onions,sliced
Pepper
Directions
Step #1 Brown brisket in roasting pan in oven set @ 400F degrees.
Step #2 When browned,remove this from oven;salt & pepper to taste.
Step #3 Add bay leaf & 2 onions.
Step #4 In another pot,saute remaining onion,green pepper & pressed garlic.
Step #5 Cook over low heat/flame until glazed.
Step #6 Add tomato,peppercorns, vinegar or sour salt & sugar.
Step #7 Let simmer.
Step #8 Adjust the sweet-sour flavor to your taste.
Step #9 Add 1/2 c of wine.
Step #10 pour the sauce over brisket.
Step #11 Cover tightly & roast in 250 to 300F degree oven for about 3 hrs or to suit size of roast.
Step #12 Do not open lid of roasting pan until ready to serve.
