Minestrone Lo-cal Recipe

Ingredients
  • Beans, drained
  • 2 cn
  • 1 Opt. Sprinkle top Grated
  • Spice uping
  • 1 cn red kidney
  • 2/3 lb potatoes,
  • Cut into 1/2-inch cubes
  • 1 tb Vegetable oil
  • 3/4 c sliced onion
  • [FF] parmesan cheese
  • 1 1/2 c Frozen mixed vegetables
  • 1 ts Dried Italian herb
  • 2 Cloves garlic, minced
  • Vegetable broth

Directions
  • Step #1 In 3-quart saucepan over med-heat/flame saut onions & garlic in oil 5 mins.
  • Step #2 Add broth & potatoes; bring to boil, reduce heat, cover & cook this until potatoes are just tender, about 10 mins.
  • Step #3 Add vegetables, beans & herb Spice uping.
  • Step #4 Cover & let simmer 10 mins.
  • Step #5 Ladle into bowls.
  • Step #6 Sprinkle top each serving with cheese.
  • Step #7 Makes 4 servings.
