Cape Cod Cranberry Meatloaf Recipe

Ingredients
  • 3 tb Kikkoman Lite Soy Sauce
  • 1/4 ts Ground cinnamon
  • 8 oz Jellied cranberry sauce
  • 4 Rock Cornish hens - - each about 1-1/4 lbs
  • 1 ts Onion powder

Directions
  • Step #1 Remove & discard giblets & necks from hens.
  • Step #2 Rinse hens; drain & pat dry.
  • Step #3 mix remaining 5 ingredients & 3 Tbsp.
  • Step #4 water in small saucepan.
  • Step #5 Heat over med-heat/flame until cranberry sauce dissolves & mixture is smooth (do not boil); remove & cool.
  • Step #6 Place hens, breast side up, on rack in shallow pan; brush cavities & skin with glaze.
  • Step #7 Bake in 375 F.
  • Step #8 oven 70 mins; brush with glaze after 35 mins.
  • Step #9 Cover hens loosely with foil; bake 30 mins longer, or until tender.
  • Step #10 Makes 4 to 6 servings.
