  • Step #1 2 Ts Ghee : pinch of baking soda 1 c Bengal gram flour (besan, finely sliced 1 Potato, : optional : piece of ginger - 1 inch, : scraped & finely sliced 4 Green chilies, finely sliced, : chickpea flour) 1/2 c Rice flour 2 tb Ghee 3 Onions, finely : sliced 1 T Red chili powder 1 Bn Coriander leaves (Cilantro) : finely sliced : Salt to taste : Water as required : Oil for deep-frying Place 2 tsp.
  • Step #2 ghee & baking soda in a mixing bowl.
  • Step #3 Rub together until frothy.
  • Step #4 Add the remaining ingredients & mix well, using sufficient water to make a thick batter.
  • Step #5 Heat oil in a heavy frying pan.
  • Step #6 Drop spoonfuls of batter into the oil.
  • Step #7 Fry the pakoras until golden in color.
  • Step #8 When cooked, drain the excess oil on a sheet of brown paper or paper towels.
  • Step #9 Serve hot with chutney.
