Open-face Peach Pie Recipe

Ingredients
  • 1 tb Water
  • 4 sl Country bread
  • 1 1/2 c Trimmed assorted mushrooms such as shiitake, oyster, chanterelle, morel & cultivated
  • 4 sl Brie cheese
  • 1/2 c Finely sliced onion
  • Salt & pepper; as desired
  • 2 tb Olive oil
  • 1 ts Minced garlic
  • 1 tb Red wine vinegar
  • 2 tb Finely sliced parsley

Directions
  • Step #1 HEAT THE OIL IN A SKILLET & add the mushrooms, vinegar, onion, garlic, water, salt & pepper.
  • Step #2 Cover & cook 3 mins.
  • Step #3 Remove the cover & cook this until mushrooms are tender, another 5 mins.
  • Step #4 Remove from the heat, transfer the mushrooms to a bowl & add the parsley.
  • Step #5 Toast or grill the bread.
  • Step #6 Preheat a broiler.
  • Step #7 Place the bread on a baking sheet & top this with mushrooms.
  • Step #8 Lay a piece of cheese on top and place under the broiler until melted.
  • Step #9 Serve as soon as possible.
