Ingredients
  • 2 ea ORANGES, CUT INTO WEDGES
  • 3 lb MEATY CHICKEN PIECES
  • 1/2 c RAISINS
  • 1 ea 1" PIECE OF GINGER ROOT
  • 1/4 c BUTTER
  • 4 c HOT COOKED RICE
  • 2 tb FLOUR
  • 1/8 ts CINNAMON
  • 1 tb BROWN SUGAR
  • 1/2 c sliced PECANS
  • 1/2 ts CURRY POWDER
  • 1 ts SALT
  • 1 1/2 c ORANGE JUICE

Directions
  • Step #1 Sprinkle top CHICKEN WITH 1/2 tsp SALT.
  • Step #2 HEAT BUTTER IN LARGE SKILLET & BROWN CHICKEN PIECES.
  • Step #3 REMOVE CHICKEN FRON PAN.
  • Step #4 mix FLOUR, SUGAR, 1/2 TEA- SPOON SALT, CURRY POWDER & CINNAMON.
  • Step #5 stir in theTO PAN DRIPPINGS TO MAKE A SMOOTH PASTE.
  • Step #6 ADD GINGER & ORANGE JUICE.
  • Step #7 COOK, STIRRING CONSTANTLY UNTIL SAUCE BUBBLES & BEGINS TO THICKEN.
  • Step #8 RETURN CHICKEN TO PAN & RAISINS.
  • Step #9 COVER & COOK over low heat/flame FOR 40 TO 50 mins, UNTIL CHICKEN IS TENDER & COOKED THROUGH.
  • Step #10 ADD NUTS AND ORANGE SLICES.
  • Step #11 HEAT THROUGH.
  • Step #12 SPOON COOKED RICE ONTO LARGE PLATTER AND top this with CHICKEN PIECES & SOME OF THE SAUCE.
  • Step #13 SERVE REMAINING SAUCE ON THE SIDE IN A GRAVY BOAT.
