Step #1 Yield: makes 6 - 1/2 pint jars Notes: Sauterne may be replaced by other white wines in this sweet tart jelly.
Step #2 The flavor lends itself for use both as a spread on breads and as a meat glaze.
Step #3 It can also be reheated for use as a dessert sauce on ice cream, sliced oranges, or berries.
Step #4 Place orange juice, sauterne, & lemon juice in heavy saucepan.
Step #5 Mix together 3/4 c sugar & the powdered light fruit pectin.
Step #6 Add to wine mixture.
Step #7 Cook over high heat, stirring constantly, until mixture comes to a hard boil.
Step #8 stir in the remaining sugar.
Step #9 Bring to a rolling boil, stirring constantly.
Step #10 Boil for 1 min.
Step #11 remove this from heat and skim off foam with metal spoon.
Step #12 as soon as possible pour this into hot sterilized jars, & vacuum seal (hot water bath method, if desired, add optional sprigs of tarragon, or can be put in the fridged up to 6 weeks).
