Oregon Hazelnut Swirl Coffee Cake Recipe

Ingredients
  • 1/2 c Italian style bread crumbs
  • 1 ts Salt
  • Boiling water
  • 2 tb Butter or margarine; melted
  • 1/2 c sliced & roasted hazelnuts
  • 1 Garlic clove; pressed
  • 1/4 c sliced stuffed olives
  • 4 md Artichokes

Directions
  • Step #1 Wash artichokes.
  • Step #2 Cut off stems at base & remove small bottom leaves.
  • Step #3 Trim tips of leaves & cut off about 1 inch from top of artichokes.
  • Step #4 mix hazelnuts, crumbs, olives, garlic & butter; stir with a tossing motion to coat mixture with the butter.
  • Step #5 Spoon between leaves of artichokes.
  • Step #6 Stand them upright in deep saucepan large enough to hold snugly.
  • Step #7 Add 1" boiling water & salt.
  • Step #8 (Pour water around not over artichokes.
  • Step #9 ) Cover & boil carefully 35 to 45 mins, or until base of artichokes can be pierced easily with a fork.
  • Step #10 Add more boiling water, if needed.
  • Step #11 serve this with extra melted butter, if desired.
