Carribean Sunset Jell-o Recipe

Ingredients
  • 1/4 c Lime juice, fresh preferred
  • 1 ts Cayenne pepper
  • 1 c Water
  • 1 tb sliced cilantro
  • 2 tb Fresh ginger;peeled,shredded
  • 1/4 c Granulated sugar
  • 2 tb Chardonnay or dry white wine
  • 1/4 ts Salt
  • 2 tb Jalapenos; seeded, minced
  • 2 tb Cornstarch
  • Soy sauce
  • 1/4 c Unsweetened pineapple juice
  • 1/2 c Pineapple chunks

Directions
  • Step #1 In a saucepan, mix the salt, lime juice, cornstarch, sugar, and pineapple juice until smooth.
  • Step #2 Premix & slowly stir in the the water, soy sauce, Jalapeno, ginger, & Cayenne.
  • Step #3 Cook over med-heat/flame, stirring constantly unyil the sauce is thick & transparent.
  • Step #4 Finish the sauce by stirring in the pineapple chunks, Chardonnay, and cilantro.
  • Step #5 Broil swordfish or chicken breast, basting with lemon and butter.
  • Step #6 Then serve on a bed of rice, topped with a liberal portion of warm sauce.
