Ingredients
  • 1 ts Salt
  • 2 c Sugar
  • 2 c Flour
  • 4 Eggs, well beaten
  • 2 ts Cinnamon
  • 2 ts Baking soda
  • 1 1/2 c Vegetable oil
  • 1 c sliced pecans
  • 3 c Grated carrots
  • 2 ts Baking powder

Directions
  • Step #1 preheat your trusty oven to 325F degrees.
  • Step #2 Grease & flour 3 layer pans or 1 bundt pan.
  • Step #3 Mix sugar & oil together.
  • Step #4 Add eggs & mix well.
  • Step #5 mix dry ingredients & stir in the.
  • Step #6 Mix until smooth.
  • Step #7 Add pecans and carrots.
  • Step #8 pour this into pan(s).
  • Step #9 bake this at 325F -- 30 mins for layers, 1 hr for bundt pan.
  • Step #10 Cake is done when a knife inserted near the center comes out clean.
  • Step #11 Frost when completely cool.
  • Step #12 CREAM CHEESE FROSTING 1 box (16 oz?) confectioner's sugar 8 oz cream cheese, softened 1/4 c butter, softened 1 tsp lemon extract mix well & spread on cool cake.
