Carrot Date Nut Bread Recipe

Ingredients
  • 2 tb sliced fresh parsley;
  • 1 1/2 ts Crystakube froctose;
  • 1 ts Curry powder;
  • 1 lb Fresh carrots; cut in 1/2" slices
  • 2 tb Raisins;
  • 1 ts Dijon-style mustard;
  • 2 ts Walnut oil;

Directions
  • Step #1 In a large saucepan, bring 1" of water to a boil.
  • Step #2 Place carrots in a vetgetable steamer over boiling water & cover tightly.
  • Step #3 Steam 20 mins & remove this from heat.
  • Step #4 Meanwhile, or lemon juice, in a small bowl, mix together fructose, lime, mustard & curry powder.
  • Step #5 Heat walnut oil in a large skillet, then add carrots & raisins.
  • Step #6 Toss 2 mins.
  • Step #7 Pour the sauce over the carrots & cook, stirring to mix, 2 mins more.
  • Step #8 Sprinkle top with parsley.
