Cellophane-noodle Salad Recipe

Ingredients
  • 1 Green onion , sliced
  • 1 ts Sugar
  • 1 pk Cellophane Noodles
  • 1 md Carrot, cut into 2x1/4-inch strips
  • X1/4-inch strips
  • 1 tb Yellow bean paste
  • 1 ts Cornstarch
  • 1 ts Soy sauce
  • 1 Clove garlic, finely sliced
  • 1 ts Finely sliced ginger root
  • 3 tb Water
  • 2 tb Oil
  • 1 md Zucchini, cut into

Directions
  • Step #1 Chinese cellophane noodles are, as their name implies, nearly translucent.
  • Step #2 Yellow bean paste is available in Chinese groceries and specialty shops.
  • Step #3 1 pkg (3 3/4 oz) cellophane noodles Cover noodles with hot water.
  • Step #4 let this stand 10 mins.
  • Step #5 Drain.
  • Step #6 Cut into 2-inch lengths.
  • Step #7 Mix 3 tbsps water, cornstarch, bean paste, sugar & soy sauce.
  • Step #8 Reserve.
  • Step #9 Heat oil in wok or 10-inch skillet until hot.
  • Step #10 Add carrot, garlic & ginger root.
  • Step #11 Stir-fry 1 min.
  • Step #12 Add zucchini.
  • Step #13 Stir-fry 2 mins.
  • Step #14 Add noodles & bean paste mixture.
  • Step #15 Stir-fry 45 seconds.
  • Step #16 Sprinkle top with green onion.
